1 cup (250 ml) Strawberry Yogurt

1 cup (250 ml) Whipping Cream

6 Strawberries

2 Mint Leaves

2. Methods

-Slice the strawberries into thin wedges.  Take 6 slices out and set to the side.

-Whip the whipping cream until stiff peaks form.

-Add the sliced strawberries, leaving 6 slices to the side, and the yogurt to the whipping cream.  Fold the mixture until blended.

-Divide the mixture into two equal parts and place into parfait glasses.

-Use the 6 remaining strawberry slices to garnish, 3 for each portion.

-Finish the garnish with a piece of mint leave.

-Store in the fridge.

3. Tips

-Optional ideas are to use blueberries and blueberry yogurt or peaches and peach yogurt.

-Use a pastry bag to fill the parfait glasses to keep the sides clean and to give the dessert a more professional finish.
